Smoked Salmon Frittata

I am a big fan of frittatas because it is like making one large omelette for everyone to share without the wait of individual servings. This recipe is like bagel and lox wrapped in eggs and does not disappoint. The smoked salmon combined with fresh dill and tomatoes and topped with creamy goat cheese doesn't disappoint. Top it with Calicutts Everything seasoning filled with salt, garlic, onion, and seeds, and you won't even miss the bagel.

  1. Preheat oven to 350.
  2. Beat eggs, milk, and a pinch of Salt and Pepper until well combined. Stir in chopped dill.
  3. Heat butter in a large cast iron pan. Add red onion and sauté 1 minute. Add tomatoes and sauté until tender, about 3 minutes.
  4. Stir in smoked salmon and cook for 1 minute. Pour in egg mixture and sprinkle in goat cheese. Let sit and cook 5-7 minutes until edges are set.
  5. Place in oven for about 10 minutes until cooked through. Remove and let cool for 5-10 minutes. Top with Everything. Slice and serve.
